Recipe #23: Sweet potato buns
This bread is a bit dense, but works well on a burger. Perfect and quick for a weeknight dinner, not to mention very healthy!
Ingredients:
- Sweet potatoes - 2
- Self-raising flour -1 cup (more depending upon the size of your potatoes)
- Egg- 1 (for glazing)
- Olive oil (for greasing)
- Salt (to taste)
- Sesame seeds
Method:
- Boil sweet potatoes, peel skin and mash the rest. (For a shortcut- Slit the potato along the sides, dampen with a bit of water and microwave for 5-6 mins).
- Add sale raising flour until the mixture makes a soft dough. Add salt to taste.
- Grease a baking tray with oil and roll the dough into smooth balls of equal size. Glaze the buns with the beaten egg mixture. Sprinkle sesame seeds on top of the bun.
- Bake @400 F for 15-18 mins, or until the bun turns a bit brown.
- I then cut the bun and pan roasted a bit before serving it with a breaded fish patty, arugula and chipotle aioli.
