Recipe #21: Lettuce wrap with spicy peanut chicken

INGREDIENTS
2 lbs (1kg) Boneless skinless chicken thighs - cut into 3/4-1 inch cubes. 

1tbsp chilli powder (the mild-moderate kind -kashmiri chilli powder would be preferable or use siracha sauce instead) 

1 tbsp soy sauce

2 tbsp peanut butter

2 cloves garlic - finely chopped

2tbsp cooking oil ( I use sunflower/ vegetable oil) 

Salt to taste (based on the kind of soy sauce you use) 

To garnish 
Roasted crushed peanuts (pine nuts are also good with this recipe) 

Scallions/ greens onions chopped finely. 

Fresh lime wedges (optional) 

METHOD
- Mix ingredients (oil, salt, chicken, garlic, chilli powder/siracha) and set aside for 15 mins. 

 - Heat oil in a large non-stick skillet. Once moderately hot, add chicken and cook for 20 mins in medium heat without lid cover. The chicken will release some stock, giving the mixture a slight gravy-like consistency. 

- Add soy sauce and peanut butter and saute until the chicken edges are brown and crispy. 

- Serve on lettuce cup topped with crushed roasted peanuts.
