Recipe #14: Tomato Rice

INGREDIENTS
3 tsp cooking oil ( vegetable oil or sunflower oil) 
3 cloves
1 bay leaf
2 tsp ginger garlic paste
1 large onion (chopped finely)
2 tomatoes (puree) 
8-10 mint leaves
1 tsp chilli powder
1 tsp garam masala 
1/2 tsp turmeric powder
Salt to taste 
Vegetables : chopped carrots, peas, etc (optional)

METHOD
Heat oil in a pressure cooker /instant pot. Add cloves and bay leaves and allow to cook for 1-2min. 

Add onions and saute until translucent. 

Add ginger garlic paste and cook until it starts sticking to the bottom of the pan and starts browning.

Add tomato puree, mint leaves, chilli powder, garam masala, tumeric and salt (add optional veggies at this time). Cook until it becomes a paste and the oil separates. 

Add soaked rice and water. 

Cook until rice is done. 

Serve with raita and side (egg masala, potato fry or potato chips).
