Recipe #12: Idli Batter

Here is one way to make idli batter. Works everytime!

INGREDIENTS

2 1/2 cup idli rava
1 cup urad dal (ulunthu / black gram) 
Salt to taste

METHOD
  • Soak both ingredients separately for 3 hours. 
  • Grind the urad dal in a wet grinder for 10 mins, once it becomes a smooth paste add idli rava and grind for another 5 mins.
  • Let ferment in warm place (inside a oven with light ON) over night / 8 hours. You can clearly see the batter raise to almost twice its height. 
  • Add salt and water just before use.
  • Steam cook in idli molded plate and serve warm with chutney or sambhar.
