Recipe #11: Lemon Blueberry Bread

This quick, easy and healthier bread is perfect for breakfast or with an evening tea. 
INGREDIENTS:

Produce: 
3/4th cup blueberries 
1/4 cup lemon rind (replace with orange)

Dry ingredients: 
1cup plain flour + 1tbsp plain flour
1tsp baking powder

Wet ingredients: 
2 large eggs
1/4 cup whole milk or Greek yogurt
1/2 cup maple syrup (or honey or light brown sugar works, as well)
1/2 cup coconut oil ( or melted cooled down butter) 

METHOD: 
1. Mix the blueberries with a spoon of flour, keep aside. 
2. Mix the wet ingredients and beat them into a homogeneous mixture. 

3. Sift the dry ingredients in a separate bowl. 

4. Add dry ingredients, blueberries and lemon rind to the wet ingredient mixture.

5. Pour into a bread pan lined with parchment paper and greased with butter. 

6. Bake for 350 F for 40-45 mins.
