Recipe #8: Mango Ice Cream

This is a really simple 4 ingredient Mango ice cream recipe. You cannot go wrong with this one! 

MATERIALS
1 can (30Oz) Mango pulp (available in most indian stores) 
1 carton (1pint) heavy whipping cream
1/2 can (7Oz) sweetened condensed milk
1 tsp vanilla extract
Ice Cream maker / chilled bowl
METHOD
- Pre chill the ice cream bowl for 2 hours before starting. 
- Whip the cream until you see peaks. 
- Add the vanilla extract, three quarters of the Mango pulp and half of the condensed milk. Mix and pour into the ice cream bowl. 

- Let the mixture churn. In my ice cream maker, 8 mins makes soft serve and 15 mins makes it thicker/ regular consistently. 

- Add the rest of the Mango pulp and do not mix much to give it a swirl effect. 
- Scoop the mix to an airtight container and freeze for 3-4 hours before serving. 

I like to pour it into these reusable single serve containers for my daughter.
