Recipe #4 : Asian Spinach Mushroom and Meat Stir Fry


Well well well.. I was trying to replicate this Asian Beef with snow peas recipe, but ended up changing the meat, vegetable and mushroom type. The recipe is simple and is as follows: 


Preparation Time: 15 mins
Cook Time: 25 mins
Serves: 2 (2 servings each)

Ingredients:
The Sauce:1/2 cup tamari or low-sodium soy sauce
5 tablespoons brown sugar
6 garlic cloves minced
1/2 teaspoon ginger
2 teaspoons rice vinegar 
The Good Stuff: 2 cups of spinach
4 tablespoons olive oil
10 oz mushrooms sliced thinly
2 cups of thinly sliced frozen meatballs 

Preparation: 
1. Saute mushrooms.
2. Saute meatball slices.
3. Blanch spinach.
4. Mix all of the above in the pan and add the sauce mix and let simmer for 8-10 mins. 
5. Serve with warm rice or noodles.
