 Baked Avocado Fries with Fish Tacos




Baked Avocado Fries: 

Preparation Time: 10 mins
Cook time: 20 mins

Ingredients and preparation: 
Avocado - slightly hard -2 - Cut into lengthwise strips
Panko bread crumbs - 1 cup in a plate for dipping, Mix a pinch of salt for taste.
Egg - 1 - beat well in a shallow bowl

Method: 
- Dip avocado in eggs and then in Panko bread crumbs. Repeat again for extra crispness.
- Lay out in a baking sheet (pre-oiled) and spray olive oil over the strips.  Bake for 425 F for 18-20 mins. Turn around half way through the process.

Fish Tacos:
(for 2 : 4 tacos)

Preparation Time: 15 mins
Cook time: 10 mins

Ingredients and preparation: 

  • Tilapia fillets - 2
  • Green onions - cut diagonally for garnish
  • Lettuce - 1/2 cut into lengthy pieces
  • Sour cream - 1/2 cup
  • Tortillas - 4
  • Lime - 1
  • Spices
Spice option 1: Salt and black pepper
Spice option 2: I use Chicken 65 masala (Any store bought spice should work)
Spice option 3: Chilli powder, garam masala, turmeric, salt, mixed in lemon juice. (a pinch of each)

Method: 
- Pat fish filet dry,apply spice mix and let it sit for 5 mins.
- Heat olive oil in a pan and cook each for 3-4 mins side or until it blackens on the edges.
- Keep cooked fish aside. In the pan with fond, cook the tortillas until warm.
- Place fish in center with lettuce, sour cream and green onions.
- Serve with lime wedges (optional) and avocado fries.
