Recipe #1 : Avocado and Cucumber sushi rolls

This is one of the quickest dinner recipes, especially if I have some leftover cooked rice

Preparation Time: 10 mins (if you are freshly cooking rice it will take the time to cook the rice too)
Cooking time : none (that's the best part)

Ingredients
  • 2-3 cups of cooked rice (warmed up)
  • 1 avocado sliced.
  • 1 English cucumber (super thinly sliced) 
  • 4 sheets nori sushi wrapping paper
  • 1/4 cup rice vinegar
  • a pinch of salt 
  • a pinch of sugar
Preparation 
  • Mix the salt, sugar, rice vinegar and rice. 
  • Layout the nori sheet and press in the rice over the nori sheet. 
  • Layer the cucumber and avocado over the rice. 
  • Roll over the nori sheet into a roll and press tightly. 
  • Cut the sushi into smaller pieces (make sure to use a very sharp knife).
